Secondary fermentation in the bottle

I had this little vixen in the cellar waiting for maturity… This broad really threw a punch. Over time she developed nutty notes of almonds due to the resting time on the lees and yeast settlement. Time did tell, a fantastic spiraling dance through the pallet. A vivacious pirouette unlike any nutcracker I have ever witnessed. Cheers to your health 🙂
